According to tradition, it was created accidentally or as an ingenious use of left-over meringue and puff pastry.

Its name, “Carolina”, comes from an esteemed customer or perhaps the daughter of the patissiers, depending on which version you hear.

Nowadays you can try it in any of the fantastic patisseries in the city of Bilbao.
