Idiazabal cheese is undoubtedly one of the jewels in the crown of Basque gastronomy. This cheese takes its name from a town in the Goierri region of Gipuzkoa, and today it is synonymous with one of the best sheep’s cheeses in the world: Idiazabal.

Idiazabal cheese is characterised by its intense, slightly sharp and balanced flavour and by the special character given by the mature sheep’s milk.
